Ingredients (Serves 6–8)

2 cups green or brown lentils, rinsed

1 large yellow onion, diced

2 carrots, diced

2 celery stalks, diced

1 red bell pepper, diced

1 medium sweet potato, peeled and cubed (for Southern sweetness)

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (fire-roasted if you like smoky flavor)

6 cups vegetable broth (or chicken broth if you want more richness)

1 tbsp apple cider vinegar (balances flavor & helps digestion)

Directions:

In a skillet, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic until softened (about 5 minutes).

Transfer veggies to your crockpot.

Add lentils, sweet potato, bell pepper, diced tomatoes, and all herbs/spices (except parsley).

Pour in broth, stir well, and tuck in bay leaves.

Cover and cook on Low for 7–8 hours or High for 3–4 hours, until lentils and veggies are tender.

Remove bay leaves, sprinkle with fresh parsley, and adjust seasoning.
